Rustic Turkey Soup Recipe

Thanksgiving is over, now its time to put that leftover food to good use! Have you ever heard of a Rustic turkey soup? Well this turkey soup is fairly popular right now. Its use is to use the rest of that turkey that you ate at your parents house on Thanksgiving. If you want to learn to make your own turkey stock for turkey soup, see cooks note at the bottom.

Here is the recipe to Rustic Turkey Soup:

In an 8 or 10quart stock pot, heat the olive oil until it shimmers, add carrots, onions and celery and sweat gently until tender, taking care not to brown. Add turkey stock and bring to a boil. Add potatoes and reduce heat to simmer. Add the cannelloni beans, turkey and bay leaves and simmer until potatoes are tender. Just before serving, add the thyme and parsley. Season with salt and pepper to taste. Discard bay leaves and serve.

Cook's note: To make the turkey stock, you will need the carcass from 1 turkey picked free of meat, 1 cup roughly chopped yellow onion, 1/2 cup roughly chopped carrot, 1/2 cup roughly chopped celery, 2 peeled cloves of garlic, 2 bay leaves, 8 black peppercorns and 6 quarts of cold water.

Break up turkey carcass and place in stock pot, cover with cold water. Bring the mixture just to a boil over mediumhigh heat. Add remaining ingredients. Reduce heat. Cook at a very low simmer for four hours. Strain stock through fine sieve and chill. Discard carcass and vegetables.
